Some of the sacrifices that God told the Israelites to practice allowed them to consume part of what was offered. The sin offering wasn't one of them. The sacrifice symbolized the passing of their sin onto the animal, its death, and then the rest of it was taken away from the person.
The blood of Jesus doesn't just cover sin, it removes it.
